This passion fuels his dedication to bringing the magic of Mexican street food and culture to his community in Delaware, ensuring every customer enjoys a truly exceptional dining experience.

To bring his Roja & Verde Taqueria vision to life, Greg knew he needed a partner who could truly capture the essence of "authentic Mexican food." He turned to his longtime chef, Maria Gonzalez, whose culinary expertise made her the perfect collaborator. And added to his crew, Chef Tye Fassett the region's premier pastry chef. Her authentic churro recipe is made from scratch daily, along with her many other pastries.

Greg quickly became a steadfast ally and advocate, committed to sharing their delicious creations with the community.

With her deep-rooted knowledge and love for Mexican cuisine, Greg and Maria's menu became the heart and soul of Roja & Verde Taqueria.
